I’m super picky when it comes to coleslaw. Then again, until I reached about 30 years of age, I was picky about many things. I guess at the age when hangovers become much harder, your tastebuds become more accepting! 😀 That’s why I’m so excited to share this delicious easy keto coleslaw recipe that I LOVE!

He mentioned coleslaw, and I begrudgingly started experimenting in the kitchen. After a few trials and definitely a few errors, I created the most delicious coleslaw!

How do you like your slaw?
Anytime I mention my coleslaw, I get asked, “is it mayo-based or vinegary?” I basically shrug and answer, “Both!” Because who doesn’t love mayo and vinegar?! So this keto mayo vinegar coleslaw hits the mark for coleslaw lovers everywhere!
And trust me, it works! The creamy texture with the tang of the vinegar will have your tastebuds singing with pleasure and you’ll find yourself reaching for the bowl to get another scoop. Seriously, Derek sometimes eats it with a spoon straight from the bowl. I’d scold him, but I’m too happy that he likes it that much! And let’s be honest…I do it myself.
Experiment with it yourself. If you’re not sure about the vinegar, add a little bit and see how you like it. But remember, the longer it sits in the fridge the more the flavors will blend. I find that making this the day before and letting it marinate in the refrigerator gives the best results. I can officially say I am now coleslaw addicted.

Easy Keto Coleslaw
Ingredients
- 16 ounce coleslaw mix
- 1.5 cup mayonnaise
- 2 tbsp water
- 1 tbsp apple cider vinegar
- 3 tsp erythritol
- 3 tsp lemon juice
- 1 tsp garlic powder
- 1/2 tsp dried thyme
- 1/8 tsp black pepper
- salt (to taste)
Instructions
- Combine remaining ingredients in a large mixing bowl.
- Add coleslaw mix to the rest of the ingredients and toss to combine.
- If you have time, place in refrigerator for an hour, or overnight for maximum flavor
- Store in an air-tight container in the refrigerator for up to seven days.
