Two of my favorite staples in my kitchen are bone broth and eggs. Combining the two to make a delicious egg drop soup? Even better!
Now that I’m trying to save both my bank account and my waistline by eating at home instead of hitting up my favorite restaurants, I’ve been experimenting a lot more with Asian cuisine. And since I love bone broth so much and try to drink it on a daily basis, soups have become a big part of my menu planning. I’m so happy with how this egg drop turned out, I just had to share. Trust me. It’s as mouth-watering as it looks! Even better, this egg drop soup recipe is low calorie, low carb, and high protein. Perfect for all my keto brethren out there!
For this recipe, all you need is bone broth, eggs, grated ginger, coconut aminos, sea salt, and pepper. If you like a bit more spice, a bit of sriracha or thai chili paste works well with this dish.
You can use store bought bone broth from brands like Pacific or Kettle & Fire, OR, if you’re feeling up to it, you can make my homemade bone broth. I might be a little biased, but homemade broth is so much better than store bought, so if you have the time, give it a whirl! You’re probably sensing a theme–I’m bone broth addicted. So making me recipe and either freezing or canning a few batches will always have you ready for whatever recipe I throw at you next.
This recipe is super easy. In a medium-sized pot, combine the broth, coconut aminos, ginger, and pepper. Bring to a boil, then reduce heat to simmer.
Whisk your eggs in a cup (preferable with a spout to pour). Slowly pour the eggs through a fork and then stir in the broth to create ribbons of eggs. Add your sea salt and hot sauce (if using) to taste.
I’m pretty simple and like my soup as is, but feel free to top the egg drop soup with any garnishes such as green onions, bean sprouts, or mushrooms. Whatever floats your boat! Enjoy and thank me later!
Also, I’m obsessed with these Asian soup spoons I got from Amazon. They are literally the perfect soup spoons and I’ll never go back to regular spoons again!
